The New Year's Eve 2023 was in Tres Cantos, in the traditional format of the del Valle Reboul family, with their favorite guests, except that it was the first time we (Laussy del Valle family) participated with Lotte.
The menu was graced by a composition from Guille (Burrata) and an asado de Lomo de Cerdo which, cooked slowly in the oven, is much tender as ou would expect for pork. It was the last year the the family's traditional plastic Christmas tree was of service, as it fell several times during the Navidades and the—not-light—decision was taken to get it out of service.
